STIR-FRIED SALTED VEGETABLE WITH PORK
200 g pork shoulder, thinly sliced
1 tsp plus 1 tbsp light soya sauce
2 tsp cornstarch
pinch of white pepper powder
1 tbsp oil
2 cloves garlic, minced
50 g kiam chye (pickled mustard greens), soaked in water for 20 minutes and thinly sliced
1 red chilli, thinly sliced
1 tsp oyster sauce
50 mℓ water
Marinate the pork slices in 1 teaspoon of the light soya sauce, cornstarch and pepper. Allow to sit for 10 minutes.
Heat up the oil in a wok and add in the garlic, frying until fragrant. Add in the pork and fry for 5 minutes. Add the kiam chye and chilli, stir-fry for 2 minutes, then add the oyster sauce, water, and the remaining tablespoon of light soya sauce. Lower the heat and simmer for 5-7 minutes, then transfer to a serving plate.
